Real mayonnaise, quick and easy; so much better tasting, and so much better for you
Healthy Fats - Good For What Ails Ya
Use this mayonnaise anywhere you would use the store bought varieties; sandwich spread, tuna and chicken salad, coleslaw, veggie dips, etc. Geri started with a recipe from Chris Kresser, and then took it in a slightly different direction. Ever wonder how to make mayo? Here you go!
Making Geri's Homemade Mayo
Prep Time: 15 min Cook Time: 0 hr
Makes: Approx. 2 Cups or 32 Tablespoons
Ingredients
1.5 C avocado oil
1 whole large egg
3 large egg yolks (eggs at room temperature)
2 TBSP lemon juice
1 TBSP dijon mustard
1/2 tsp Himalayan pink salt
1/8 tsp ground white pepper
Directions
Measure out the ingredients
Put all ingredients except the avocado oil in blender
Set blender speed to 2/10
Start blender
Drizzle in avocado oil slowly, allowing time for the egg yolks and mustard to emulsify the oil (~3.75 minutes in the video)
Stop blender, check mayo for desired thickness; keep in mind it will futher thicken upon cooling
Transfer mayo from blender to Ball jar or other air-tight container
Refrigerate
Why Not?
It's practically as easy to make your own mayonnaise as it is to buy it. A lot of people have olive oil on-hand, that could be substituted for the avocado oil; ground black pepper for the white pepper, lime juice for lemon juice, table salt for Himalayan; you get the picture.
One of the most important steps in taking command of your own health is to take back the kitchen!
